I've committed to making a few trays ( four half trays) of a cold pasta salad to our fundraiser on Saturday. I'm thinking one pound of pasta/half tray. Do any of you make this on a regular basis and have suggestions? I'm doing vegetarian since there are alot them in the cat rescue community. I'm thinking..tri color pasta rotini, red onions, red peppers, broccoli flowerts, sliced olives, maybe some zucchini, Italian dressing. What do you all think?

Sounds good Laura. I make one very similar including chunks of mozzarella and pepperoni for antipasto style. I use Wishbone Robusto Italian dressing. It’s always a hit.

sounds great Laura. believe it or not I actually make pasta salad, I use the tri-color pasta, sliced olives, pepperoni, yellow and white cheeses. I use caesar dressing.

I haven't made it in a long time but I always added loads of vegetable, and used Good Seasons Italian dressing. I also always added McCormick Salad Supreme with cheese. And lots of parmesan!

I like a Greek pasta salad with feta, veggies, and pasta and a olive oil and vinegar dressing and when I make as a meal I will add some hot sausage.

I love Greek salad--feta, kalamata olives, tomatoes, zucchini, cucumber with evoo dressing.

Sounds good. You can add all kinds of veggies to it - like cucumber and cherry tomatoes too.

All sound great. I know you said most people are vegetarians but what about putting pepperoni in one of the trays for the non-veg people.

My colleague is going to do a few trays with pepperoni and cheese, etc.

For the kid's engagement party this past summer, I made a large batch - used 3 boxes of tri-colored pasta,
red pepper, finely diced onion, broccoli florets that I lightly blanched, carrots, celery, pepperjack & cheddar cheeses in small chunks & also small pieces of pepperoni. Like Teri, I use Good Seasons dressing. This was a huge hit. (I had a can of black olives to go in this salad but I forgot them. Nobody noticed but me.)

When I mixed this up, I actually used a plastic bin! It was new - but I washed it with dish detergent and hot water, dried it well - and it worked great for mixing up this huge batch of pasta salad.

:lol: Did my shopping this AM. Lightly blanching the broccoli sound like a good tip
