I remember my Auntie making salted cod. It came in a box, she would soak it in milk overnight and serve it with potatoes and peas. We had chicken cutlets with what I call a Dino. It is a pita bread with thousand island dressing on it, topped with a salad that has sweet pickles and a slice of mozzarella cheese on top that has been under a broiler for a minute or two. And for dessert? Oikos yogurt, fat free chocolate pudding, 4 different berries, pecans and craisins, topped with sugar free whipped topping and a cherry.
DH had a Grey Goose Mule and I had Pinot Grigio.

I make salted cod. Soak in water overnight......change the water frequently. Boil the cod with yukon gold potatoes and eggs. In a separate pan, cook onions with EVOO and red crushed (wet) pepper. When everything is cooked, you layer (like lasagna). Sliced potatoes, pieces of cod, sliced boiled eggs, onions and sliced black olives. A splash of a good EVOO on top and bake in the oven for 20 minutes. Yummy!! It's a true Portuguese dish.

I don't think I ever had Spam either. Thanks Pat, he's very happy with the result of the surgery done last week. Doc said this would be uncomfortable tonight - we see him in the AM for follow-up.

Fried bologna is Newfoundland steak; fried with crispy edges, mmmm. Haven't had that in years, need to add to my cottage grocery list, I'm sure the calorie count and ingredient list isn't something I want to read :lol:

Dan, I saw a picture of a fried fluffernutter and almost lost my mind. We can just dream about fried stuff.....cause I doubt they are on your approved food list and I know that are not on mine.
