Busy day at the cat house - I was on on my feet 8 1/2 hours :shock: Gin and tonic on the deck and hot dogs tonight. This was a visitor to a neighbor's paddle board. Look at those feetsies.

Cool, wouldn't want him landing on my green O. Just water tonight. Donover baked chicken, small baby red potatoes and pickles I made in the micro a couple of days ago. Turned out pretty good. Just a small batch, no hassle with bottling, just keep in the bowl I made them in. I ate the whole thing (1 eng cuke and onion in 3 meals), I need to make more.

I posted in recipes. I only used 1 cucumber because I thought I wouldn't have enough room in my bowl, it did cook down though and I could have used two. I had lots of juice left over. Other than that I made exactly and were good, got better each day, you could play with the ingredients. I wanted to make as directed so Mom could try before I start experimenting as her sister makes some and I wanted her to compare since she hasnt given me the recipe yet, unfortunately, I ate them all...... :oops:

We had chicken sausages sautéed with onion, carrots and apples. Dessert was half a muffin with sugar free butter pecan ice cream and fake whipped cream. DH had red wine and I had Pinot Grigio. Life is good........sooooo good.

We had real food tonight! I have been slacking in the cooking dept.
Pork roast, mashed potatoes, fresh green beans and corn on the cob, delish!
Yes, fruit too, raspberries, blueberries and pears. Grandsons are here. Milk and water to drink.

I've made a couple batches of refrigerator pickles...first with a kit Sandy bought, then with recipes found on the internet. Dill, of course.
Would still like to know yours? Must be late, I am not successful in finding your 'recipes' post.

Well, anyway, dinner for us was some chicken in a barbecue sauce (on the stove), an ear of corn with butter, and some Bush's baked beans. I didn't finish all the chicken or all the baked beans. I promised it wound be lunch tomorrow.

Here ya go, John. Thanks Karen. Looks easy!

Microwave Bread and Butter Pickles

Ingredients
1 cup white sugar
1/2 cup white vinegar
1 teaspoon salt
1/2 teaspoon mustard seed
1/4 teaspoon celery seed
1/4 teaspoon ground turmeric

2 large English cucumbers, thinly sliced
1 large onion, diced

Directions
Stir sugar and vinegar in a large microwave-safe bowl until sugar has dissolved; mix in salt, mustard seed, celery seed, and turmeric. Stir cucumbers and onion into the pickling mixture.
Microwave on high, stirring twice, until cucumber slices are tender and onion is translucent, 7 to 8 minutes. Chill before serving.

Funny thing. As I read about Karen's pickles, I was thinking - I made pickles once.. they were really good... I wonder where that recipe is..........
Then, I clicked on the Recipe section to see Karen's recipe, and boom - I had posted the recipe I'd found years ago.
