Frozen corn on the cob.


6 cups corn (approx. 8 ears)
1 cup water
3 Tblsp. sugar
1 1/2 tsp. salt (decrease amount if using sea salt)
1/2 to 1 stick unsalted butter

Cut raw corn off the cob...do not blanche first.
Put corn in pan and add water, salt and sugar. Cook mixture for 10 minutes. I turn it up and bring it to a slight boil and then reduce heat so it simmers nicely.
Add 1/2 to 1 stick butter, depending on taste.
Cool corn and put in freezer bags or containers and freeze.
Yield approx. 2-3 quarts.

I usually do 4-5 batches at a time.


Edited...one bushel yielded11 batches (one batch is above) and 18 quart.
